Round or oval with a bitter green or yellow skin, guava pulp is hard, slightly granular, pink, yellow or salmon pink and very fragrant, Guava can be sweet or sour with a flavour varying somewhere between pear and strawberry, which works well in savoury or sweet dishes. In Hawaii, chunks of guava are dipped in soy sauce and vinegar, in the Philippines it is popular in stew, and in East Asia it is eaten with sweet and sour dried plum powder, In Mexico, Guava is an ingredient in 'agua fresco', a light non-alcoholic drink made with cereals, fruit, seeds or flowers mixed with water and sugar, Guava goes very well with lime, cream or custard and is delicious as ice cream or sorbet.
