This was my first white wine kit (and third kit of any type) so I can't claim any great experience but the outcome was overwhelmingly positive. I abided by the kit instructions, aside from rehydrating the yeast before adding. I cocked up the temperature initially, by using a heat mat overnight...I checked in the morning to find it bubbling away merrily at 26 degC. I swiftly brought it down to a stable 20 degC for the rest of the fermentation. When I racked off into the carboy I negligently drew off some sediment which clouded the wine. However, once I added the supplied finings it cleared beautifully.
The finished result is delicious...and improving. My Wife, notoriously fussy with whites, is very (and worryingly) impressed - and wants me to make another batch ASAP. The flavour profile is slightly floral with a pleasing acidity. The mouthfeel is a bit heavier than I'd expect for a pinot....possibly more like a viognier. That's about as descriptive as I can get with wine, but, given that I made a couple of errors in the making, this is a lovely wine that I'd be happy to pay £8-10 for in a supermarket and would be pleased with in a restaurant.
