Dry brewing yeast typically contains less than 7% water. Stringent quality standards are applied during manufacturing to avoid microbial contamination. The remarkable stability of dry yeast allows for significant QC testing in order to ensure less than 1 bacterium or wild yeast cell detected per million cells of brewing yeast. For most strains, 1g of dry yeast contains a minimum of 5 billion viable cells, but the number will vary slightly from batch to batch.

Abbaye: Ale Yeast of Belgian Origin, perfect for fermenting Belgian style beers ranging from low to high alcohol. Abbaye produces spiciness & fruitiness typical of Belgian & Trappist style ales.

New England: LalBrew New England is an ale strain selected specifically for its ability to produce a unique fruit forward ester profile desired in East Coast styles of beer. 

Belle Saison: Ale Yeast of Belgian Origin, perfect for fermenting Saison style beers. Belle Saison is a diastaticus strain that allows brewers to achieve high attenuation characteristic of a classic style. Belle Saison produces a spicy & fruity type Saison Ale. 

American West Coast: American Style Ale Yeast, perfect for high quality brews. West Coast is a neutral strain with an high flocculation ability, perfect for a wide variety of American-style beers. American West Coast promotes hop flavour & aroma. 

Cask & Bottle: Specifically designed from Lallemands Yeast Culture Collection due to its refermentation properties & has a high resistance to alcohol and pressure. This Yeast strain is neutral to reserve flavour & characteristics of the beer, as well as Cider or Mead.

Diamond: Lager Yeast of German origin, perfect for fermenting clean, authentic lagers with an excellent fermentation performance. Traditional Styles brewed with Diamond Yeast such as Munich Helles & Dortunder Express for example. 

Koln Kolsch: Ale Yeast of German origin, perfect for traditional Kolsch-style beers & other neutral ales. Neutral strain accentuates delicate hop aromas while imparting subtle fruity esters.

London English: Ale Yeast of London heritage, reliable in performance & modern ester production that allows flavours, aromas & malt character shine through. London is perfect for heritage style UK beverages. 

Munich Classic: Wheat Beer Yeast of Munich heritage, Bavarian strain that expresses spicy & estery aroma profile typical to German wheat beers. This yeast covers a wide range of traditional styles of wheat beer. 

Nottingham: Ale Yeast originating from Northern England, high performance & versatility for a wide range of fermentations. Nottingham has a neutral strain that can be used across a large range of traditional style ales like Pale/Amber Ales & Porters for example.

Verdant: Ale Yeast produced in collaboration with Verdant Brewing Co, perfect when creating a hop-forward & malty beer. Verdant IPA leaves a soft and balanced malt profile with slightly more body than a typical American IPA yeast strain.

Voss Kviek: Ale Yeast originating from Norway, the ideal yeast for fermenting across a whole range of temperature with a very high optimal temperature & maintaining full attenuation within 2-3 days.

Windsor British: Beer Yeast with a true English strain, producing a balanced fruity aroma & slightly fresh yeasty flavour. Windsor is perfect for full-bodied beverages with a moderate alcohol alcohol level. 

Farmhouse™: is a non-diastatic hybrid that has been selected to make saison-style and farmhouse style beers. 

NovaLager™: is a robust lager strain with ideal characteristics for lager beer production including fast fermentations, high attenuation. 

Belgian Wit: Wheat Beer Yeast of Belgian heritage, neutral strain which is perfect for a wide variety of Belgian style beers. Ester and phenol production is lower than for traditional hefeweizen strains such as Munch Classic.

Best yeasts

I made a 40ltr brew on the 21st June using up some older malt and hops & needed a yeast that would work with a 1058/60 OG & produce a full bodied beer - Lallemand London was my choice & l had 1 , out of date by 2 years in my fridge LOL ! - I made a starter with some wort & within 20 mins. it was almost overflowing the flask !! I pitched the starter at 28 degrees & it was producing bubbles within an hour - 3 days later it had almost finished ! On the 4th day it went in the keg with priming sugar The beer has almost cleared completely now despite no finings, not even Irish moss at end of boil , being used . The flavour & mouthfeel are unbelievable - a REAL ESB style - I'm chuffed with the result ! To replace the yeast I have bought Lallemand Windsor based on online recommendations - Having used Lallemand before , I expect it will work fine & I have 25 ltr Helles style lager fermenting now (15-7-24) on a Lallemand Diamond yeast looking good ! What's not to like ?

Good, fast fermenting yeast

I have used this yeast in the before so I specifically looked for it.
It works well for mead, ale, and cider. For best results keep it above ambient temperature (25-40C temperature range, ideally above 35C) and ensure you have good nutrient content in you're must. Recommend using a brew bucket if you have fresh fruit in you're brew as it's incredibly vigorous and can cause explosions.

Ferments very quickly in the right conditions (Had one ale done in only 2 days!). Requires little to no aging. Strongly recommend Voss Kveik to anyone wanting to make session meads or mead in general, easily performs better than others yeasts commonly used for mead like EC-1118.
