A specialist active dried whiskey distiller's yeast of saccharomyces cerevisiae, used widely in commercial whiskey. It delivers robust and authentic aromatics even in high-alcohol fermentation. This yeast is highly viable and robust, ensuring a short lag phase and reduced risk of bacterial infection.

Sufficient for up: 25 L (6.6 US Gal) Fermentation

Instructions:Leave to ferment between 20-28ºC (68-82ºF) ambient air temperature for optimum performance and quality.

Ingredients: Dried yeast, yeast nutrients, amyloglucosidase enzyme, anti foaming agent, vitamins, trace minerals. 

NOTE: Distiller's Yeasts are designed for use when making spirit in the more traditional way, i.e. from grain.

Still spirits Whisky yeast

Totally flaberghasted at how well this yeast has taken off = Used with the still spirits nutrient and to be honest I have used a single pack with a 40L wash made up from 1.5Kg of liquid malt extract and 5Kg dextrose The first two days I saw activity with about 15mm of krausen on top of my open fermenter. I just use a heavy lid and don't worry about airlocks etc. So day 2 there is a sudden change in activity and the yeast has gone mad and the Krausen actually overfilled the fermenting vessel - that is a good 100mm plus of krausen on top of the wash so I had to take the lid off and wash it off. The yeast was fully active and I collected just about 25mm of the foam into a jar with some preboiled water to save for another batch - that 25mm when settled out has given a good 10mm thick layer of useable yeast it has multiplied so much. I've harvested the same for three days now and have enough fresh yeast to last the year I suspect.
I can only assume that this was because 1) my wort was very well oxygenated by high level poring into the fermenter. 2) the yeast nutrient allowed the yeast to fully activate and grow expotentially and 3) the mix of dextrose, malt and nutrients was perfect for the yeast growth before actual fermentation started.
It hasn't completed the fermentation yet but it is still going strong and I have no concerns about it doing its job. I will be using the harvested yeast for a full grain brew once this one is completed so I'm exceedingly happy with this yeast and the nutrients
