Seven days is optimistic even with immersed heating. Therefore I allow about ten days of fermentation to produce an s.g. of less than 1.0 before ‘stopping’. Likewise with the two pack finings allowing three or four days of unheated settling. Final ‘polishing’ using a perlite and bentonite clay septum. Result? Crystal clear white and red wines that continue to develop in the bottles. Patience is always beneficial to the homebrew enthusiasts. And the result? Extremely drinkable wines at a miserly bottle cost. Salud
